There’s a bite to the air. You’ve got your scarf, your hat and your boots. You hold a hot beverage in your hand- maybe its coffee or chai, or even hot chocolate. You kick through the leaves that hug the edge of the road and look up to the mountains and see bright colors jumping out. Spicy aromas hang on the air- nutmeg and cinnamon. You sigh contentedly… and then it hits you. You are in love with the entire season of FALL.
It’s ok. Just go with it. Embrace it. Once you realize that you’re hooked, there’s people like me to help guide you through everything you need to know. Today I’d like to share a few more recipes and some yummy little treats. First, some grab-‘n-go Fall must haves….otherwise known as Brooke’s Fall Vices.
I’m not really a candy sort of girl, but these… THESE. You’ll pop one in and be like, “Ok, these are good,” but you must WAIT and then BAM- the cinnammony deliciousness.
Purchase. You can thank me later.
Next up… let’s say you have company come into town- maybe to drive the unbelievable ALPINE LOOP, and you know you’re going to want some sort of morning beverage to take the edge off from the the night before… Just add this baby to your morning cup o’ jo and you’ll be ready to take on another Fall day in all its glory. Delish.
Starbucks is currently offering this lovely little beverage, but I’ve found that it’s just as fun to make yourself at home, and you can buy these at Starbucks or your local grocery store. I’m a HUGE Tazo Chai fan, but this is a fun change for the Fall!
Now this is just plain ridiculous. I mean Ben and Jerry’s totally rock the ice cream market but this is crazy good. Luckily, it comes in small containers!
Ok now for two of my favorite FALL RECIPES. Both make great family meals! Taco Soup and Veggie Curry.
Brooke’s Taco Soup
This is a really easy recipe to throw together quickly for a large group- my kind of meal!
2 Cartons Veggie/Beef Stock (or just water will work)
1 can black beans
1 can corn
Chopped up tomatoes (I like the little cherry tomatoes because they are sweeter)
Sautéed 1/4 Onion
1 Packet Taco Seasoning
(Optional ground beef)
Bring to a boil and then cook on medium for 15 minutes.
Dish into bowls and add the following:
Dollop of Sour Cream
Handful of tortilla chips- crushed
Sprinkle your favorite cheese
The second Fall meal I’d like to share with you today is:
Brooke’s Veggie Curry
Curry is one of my favorite flavors because I LOVE the spices! This is a little more time consuming because you have to chop the veggies, but I usually just make a big batch so there’s left-overs and trust me, you will WANT left-overs.
Get the rice going first so it has time to cook. I usually use brown or wild rice.
Dice and sauté:
Sweet Potatoes (I use potatoes year round and then Sweet Potatoes in the fall for a little variety)
Bell Peppers (I cut up half of each color so that it looks really pretty)
Add 2 cups of water for each box of curry- I usually make enough to use two of these. I vary between medium and hot- depending on who I’m cooking for:
You can also add Chicken or Beef.
Bring it to a boil when you add the water and curry and then turn it on low to simmer for a good 1/2 hour.
